Karen's Scotch Eggs

6 Hard Boiled Eggs (peeled)
1 lb of sausage (hot is best)
1 cup of plain bread crumbs
1 egg
1 tablespoon of water
1/2 teaspoon of mustard

Preheat oven to 450 degrees.
Divide sausage into six portions, wrap around hard boiled eggs. Roll ball in bread crumbs and set to side. In small bowl whisk 1 egg, 1/2 teaspoon mustard and 1 tablespoon water. Roll balls in egg mix and roll in bread crumbs again to coat. Place on pan with rack so drippings can drain. Cook for 30 to 35 minutes or until brown. Cool slightly cut and serve. It can be served with mustard or hollandaise sauce.
